The problem with most commercial brands of non-dairy milk is that they are watered down and usually contain sunflower oil and other additives.  Why not make your own?  Can't be bothered?  

You will once you know how EASY it is to make delicious, additive free nut milk.

Classic Sweet Almond Milk

Ingredients:

  • 3/4 cup almonds
  • 4 cups water
  • 1 Medjool date OR 1 Tbsp agave nectar

Directions:

1.  Place almonds and water in a blender and blend on high speed until milk is created.

2.  Strain the almond milk through the bag into a jug.

3.  Return nut milk to blender, add sweetener and blend. Serve and savour!

For a creamier richer flavour, reduce the amount of water and/or add a dime sized scraping of coconut butter.

Quick and Easy Nut Milk
This recipe is for when you don't have any nuts or seeds on hand.  You can use any raw nut butter you have on hand.


Ingredients:

• 2 Tbsp any raw nut butter
• 2 cups water
• 2 Tbsp agave nectar
• 1/2 tsp vanilla extract OR 1/2 vanilla pod
• 1 Tbsp coconut butter (optional)

Directions:
1. Place all ingredients in a blender and blend on high speed.
2. Strain the almond milk through the bag into a jug and serve.

Brazil Nut Milk

Brazil nuts are a great source of selenium. They have about 2500 times the amount of selenium than any other nut. Brazil Nut Milk Selenium is a powerful antioxidant that helps protect against disease. Selenium also slows down the aging process and boosts the immune system!

Ingredients:

• 1 cup raw Brazil nuts
• 4 cups purified water
• 1/4 cup agave nectar OR raw honey
• 2 Tbsp coconut butter
• 1 Tbsp vanilla extract OR 2 vanilla pods
• 2 packets of stevia
• 1/8 tsp sea salt

Directions:

  1. Place brazil nuts and water in a blender and blend on high speed until milk is created.
  2. Strain the brazil nut milk through the bag into a jug.
  3. Return nut milk to blender, add sweetener, coconut butter and vanilla.  Blend and serve.

Pecan Milk

Pecans are a good source of fiber and contain iron, calcium, vitamins A, B, and C, potassium and phosphorous.

Ingredients:

• 1 cup raw pecans
• 4 cups purified water
• 1/2 cup agave nectar OR raw honey
• 2 Tbsp coconut butter (optional)
• 2 tsp vanilla extract OR 1 vanilla pod
• 1/8 tsp sea salt
• 1 tsp cinnamon (optional)

Directions:
1. Place pecans and water in a blender and blend on high speed.
2. Add remaining ingredients and blend.
3. Strain and serve.

Macadamia Milk

Macadamia nuts are high in fiber, taste great, and have no cholesterol. They also have a very high proportion of monounsaturated fats (which are the good fats).

Ingredients:

1 cup raw macadamia nuts, soaked for 1 hour or more
3 cups purified water
1/8 cup agave nectar OR raw honey
2 Tbsp coconut butter
2 tsp vanilla extract OR 1 vanilla pod
1/8 tsp sea salt

Directions:

1. Place nuts and water in a blender and blend on high speed.
2. Add remaining ingredients and blend.
3. Strain and serve.

Vegan Nut Milk Egg Nog

This recipe uses fresh, homemade almond milk, frozen banana, dates, a touch of vanilla and spices to reproduce a thick, creamy version of this holiday treat. 

This recipe makes about 16 ounces, which makes two servings.

Ingredients:

  • 1-and-1/4 cup plain almond milk. (Don’t add the vanilla or dates.)
  • 2 frozen bananas, peeled and sliced
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 date soaked for 10 minutes
  • dash of ground clove
  • 1/4 teaspoon pure vanilla extract
  • dash of sea salt

Directions:

Start by adding the liquid to your blender, blend on high for 20 seconds or until there are no chunks of frozen banana left. Garnish with a dash of cinnamon and nutmeg if desired.

Soak nuts and seeds for a minimum of 8 hours to receive all the health benefits of raw nut milk.
Why?  Nuts (and grains, legumes, beans and seeds) contain phytic acid which bind with minerals making it difficult to absorb the nutrients.  Soaking deactivates phytates and enzyme inhibitors.

The nut pulp can be dehydrated for storage or incorporated into raw food recipes.  Dehydrate and store for a gluten free flour.

Nut Milk Variations

Try adding a couple of tablespoons of carob or cacao powder to make tasty chocolate nut milk.

Add a pint of strawberries to make delicious strawberry milk.

Add a couple of vanilla beans to really amp up the vanilla flavor!

Add a banana or two to make creamy banana milk.

Or add a banana to the chocolate milk to make a yummy chocolate banana  shake.
